So easy it's ridiculous!
2 Chicken breast
8 oz. 
1 tbsp. Butter or Olive Oil
8 oz. cheddar cheese
Cut chicken into large cubes
Cook chicken breasts in 1 tbsp. butter over medium heat just until done. Stir in heat 2 minutes over low heat to remove excess water.
Top 1 tortilla with meat mixture and cover with cheese and the second tortilla and heat slowly in skillet until the tortilla is lightly brown, hard and crispy and cheese is melted. Flip and do the same to the other side.
Slice and serve hot.
