Jen and Glenn are a couple we met at a Wednesday Market in Kirkland, Wa. Here's their chili recipe.
1 lb lean ground beef
1 lb lean beef cut for stew
2 cans kidney beans, drained and rinsed
1 can crushed tomatoes
1 can diced tomatoes
16 oz your favorite Salsa de Rosa salsa (the chunkier, the better!)
Chili powder, cumin, and/or favorite hot sauce(s) to taste (we like
Brown ground beef; drain and place in pot. Brown beef cubes (toss with flour first if you like); place in pot. Combine all other ingredients and simmer for an hour. While it's cooking, make a batch of cornbread.
Serve chili in large bowls with hot cornbread and your favorite fixings.
