Stuffed Quesadilla

So easy and it's ridiculous!

Ingredients

2 Chicken breast

8 oz. Salsa de Rosa

1 tbsp. Olive Oil

8 oz. cheddar and/or pepper jack cheese

Instructions
  • Cut chicken into large cubes
  • Cook chicken breasts in olive oil over medium heat just until done.
  • Stir in Salsa de Rosa heat 2 minutes over low heat to remove excess water.
  • Top 1 tortilla with meat mixture and cover with cheese and the second tortilla and heat slowly in skillet until the tortilla is lightly brown, hard and crispy and cheese is melted.
  • Flip and do the same to the other side.
  • Slice and serve hot.
