Stuffed Quesadilla

Super easy and quick lunch or dinner.
Ingredients
- 2 chicken breasts
- 1 tablespoon olive oil
- 8 oz cheddar and/or pepper jack cheese
- 8oz Salsa de Rosa
Instructions
Cut chicken into large cubes and cook over medium heat until done. Stir in Salsa de Rosa and simmer for 2 minutes or until water cooks away.
Top a tortilla with chicken and cover with cheese. Place a second tortilla on top and heat slowly in skillet until tortilla is brown and crispy or until cheese is melted.
Flip and do the same on the other side. Slice and serve hot!
