Steve’s Omelete

Ingredients

  • 2 eggs
  • Butter
  • 3/4 cup cheddar cheese
  • 1 tablespoon sour cream
  • 1 tablespoon cottage cheese
  • 3 tablespoons Salsa de Rosa
  • 2 strips of bacon
  • 1/2 cup chopped tomato
  • 3 mushrooms
  • 1 tablespoon chopped onion
  • Salt and pepper

Instructions

Warm up non-stick skillet. Butter pan. Over med-low heat, add beaten egg. Rotate skillet to get egg to completely cover skillet.

Once egg begins to cook, add sour cream, cottage cheese, and cheddar cheese in a line down the center of the egg. Crumble bacon on top down the same line. Add Salsa de Rosa and other ingredients to taste. 

With a spatula, carefully ensure egg is not sticking to edges of pan. Lift one third of the egg and fold it over the center line. 

Cook briefly until cheese is melted. Slide onto plate, cover with remaining Salsa de Rosa and serve.
